The days are hot and the tomatoes and cucumbers are plentiful. Tomato and Cucumber Salad is a great way to use these vegetables when they are at their peak.
Tomato, cucumber, and onion salad, goes with just about anything. Tonight at dinner we had left-over meatloaf, coleslaw, and fried corn, from last night when my son and granddaughters came over. The salad was easy to fix and was delicious. I had just gone to the garden to pick the tomatoes, and cucumber. We used both yellow onion, and green onions in the salad.
Cut 2 medium size tomatoes, 1 medium cucumber (peeled) into wedges. Cut up about 1/4 cut onion into small pieces, or rings. You can use yellow, red, or green onions or a combination. Mix together. Salt and pepper to taste. Toss with a tablespoon of olive oil. Cover with plastic, and chill in refrigerator for about 30 minutes.
