Start your New Year with a dish of good luck and great flavor! This southern style black eyed peas recipe is sure to be a winner to ring in the New Year!
- 1 cup dried black-eyed peas, soaked overnight
- 4 cups water or chicken broth
- 1 small onion, diced
- 1 clove garlic, minced
- 1 smoked ham hock or 4 slices of bacon
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Drain the soaked peas and rinse well.
- In a large pot, combine the peas, water or broth, onion, garlic, ham hock or bacon, and bay leaf.
- Bring to a boil, then reduce to a simmer. Cover and cook for about 1-1.5 hours, stirring occasionally, until the peas are tender. Add more water if needed.
- Remove the ham hock or bacon before serving. Season with salt and pepper to taste.
Pair with cornbread and greens for a traditional New Year’s feast!
