As we clean out our gardens to make way for fall vegetables, there always seems to be an abundance of tomatoes, and cucumbers, hanging around. Instead of letting them sit on the counter or go to waste, why not toss them together into a fresh, simple, and flavorful salad? It’s one of the easiest ways to enjoy those last tastes of summer before we start planning for our cool season crops. This dish is perfect as a side for grilled chicken, fish, or even as a quick lunch on its own.

Fresh Flavor – The crisp cucumbers balance juicy tomatoes, while onions add just the right bite.

Light but Satisfying – Using Italian or light Italian dressing keeps it healthy but still flavorful.
Tomato, Cucumber, and Onion Salad
Ingredients:

3 medium tomatoes, chopped or sliced into wedges

2 medium cucumbers, peeled and sliced (or unpeeled if skin is tender)

1 small red or white onion, thinly sliced

½ cup bottled Italian dressing (regular or light)

1 tablespoon fresh parsley, chopped (optional)

Salt and black pepper to taste
Instructions:

In a large bowl, combine the tomatoes, cucumbers, and onion.

Pour Italian dressing over the vegetables and toss gently to coat.

Season with salt and pepper.

Refrigerate for at least 30 minutes before serving to let the flavors blend.
